I'm doing the Power Cooking shows this month and am demoing Chili and Cornbread. At the end of the month, I am planning on spicing up the Chili for a Maudi Gras theme with King Cake.

Anyone have a recipe or suggestion for the cornbread?
I'm planning on using the crown cake at the end of the month for the king cake (rum cake), and using the silicone cupcake pan for the cornbread (to match the March monthly shows).

Any suggestions? I thought about making it simple for the sake of time, but am not sure if one 8.5 box will do it for the silicone cupcake pan.
 
I THINK I got this from the Soups,Stews recipe cards....

Mini Corn Muffins
Preheat oven to 350°F. Lightly spray Deluxe Mini-Muffin Pan with non-stick cooking spray.
Prepare 1 package (8-½ oz) corn muffin mix according to directions. Stir in 2 tablespoons finley chopped green or red bell pepper and ½ cup whole kernal corn.
Fill muffin cups ¾ full. Bake 12-13 minutes or until light golden brown. Yield: 24 muffins
 
Oh man, the BEST cornbread is simply adding 6oz. of shredded cheddar cheese and 1 tiny can of diced green chilies to the cornbread mix. Sprinkle 2oz. of shredded cheddar cheese on top during the last few minutes of baking. Bake according to the corn bread directions.

1 box jiffy cornbread mix
4 eggs
1/4 cup butter melted
1 cup milkThey are deliciously sweet. It makes enough to fill the silicone floral and the mini muffin pan.
