Good Morning!!!!!

Happy Birthday to cheffers....Brenda K., msadoian, Geekgirl69, and ShelbyMichalek...have a super day, today!!!!:)

Tonight for dinner we are having turkey burgers w/melted fresh mozzerella, I may try the spinach strawberry salad mentioned reecently here on PC, along with grilled zuccini, eggplant and peppers....

Have a Bridal Shower tonight...for the family, who steadfastly refuse to do a PC one, so I see that the bride is registered for crap at Target and BB&B....oops, sorry, I digress...

Anyway, I'll be having Chicken Salad on croissants, Fruit Skewers w/ dip (I'm making those) and Cream Puffs w/ chocolate sauce and strawberries. (I'm also making the sauce).

Did I mention that they've called me twice to ask if they can borrow my PC serving dishes and platters? Oh sure, use me, but don't support me. :rolleyes:

So, the Big & Little Man will be having Fruit Salad, and Sloppy Joes.
 
Had a salad (my normal spring mix with spinach, tomato, avocado, craisins, feta cheese and tiny bit of Greek dressing) and an orange bell pepper dipped into hummus. I mixed chipotle rub into the hummus. Love it that way.

Just wanted you to know - the Spam Salad was still there. Spam, cheese, noodles...what more could you want?:rolleyes:
 
I marinated cubes of center cut pork loin in canola oil, white wine vinegar, and Jamaican Jerk Rub. Then skewered them with pineapple chunks and grilled it. Served it with brown rice. The pork was succulent and juicy and the rub imparted the best flavor!

Sounds really good, and I have everything in the house to make this for dinner tomorrow!

CAKE! I would want CAKE! Cake with frosting. I could skip right over the SPAM salad, eat the fruit kabobs and go right to the cake.
 
Becky, I also recommend making a yogurt dipping sauce. Take plain yogurt and season it with some of the Rub and maybe some chopped cilantro and very finely chopped shallot or onion. I commented to Evan while we were eating that a yogurt sauce would be perfection.And the pineapple was sweet and tender with the perfect amount of caramelization from the grill. :)

No cake - just cream puffs. BUT I made a killer hot fudge sauce to go with them!:chef:
