Oh that sounds good! I may need to try that.janetupnorth said:I just had Turkey Jamaican Jerk Nachos...yum and good use for the turkey, especially when you've had plenty.

I thought it sounded familiar. I have that book, thanks!pamperedbecky said:It's in the Cooking for Two or More cookbook.I don't have it saved or typed out in a file, so I can't attach it. I have to run, but if nobody else has this already typed out and can post it, I'll try to jump on at a later time and post it. Hopefully someone else might have it saved.....

Do you think in a pinch for time that one of the condensed creamed of _____(something!LOL!) soups will work?smarteez2 said:I love it.
I make a rue of flour and butter then add milk and stir until it thickens. Salt and pepper to taste. When it is thick enough I add leftover pieces of turkey, diced or hand torn into bite sized pieces. Cook until turkey is warmed through and then serve over mashed potatoes. Just had this tonight as a matter of fact!! Yummy!!
Leftover turkey can be used in a variety of dishes! Consider making turkey soup, turkey pot pie, turkey sandwiches, or turkey tacos. You can also shred the turkey and mix it with BBQ sauce for a delicious turkey slider or use it in a casserole with vegetables and cheese.
Absolutely! For a simple turkey soup, sauté onions, carrots, and celery in a pot. Add shredded leftover turkey, chicken broth, and your choice of seasonings. Bring it to a boil, then add noodles or rice and simmer until cooked. Finish with fresh herbs for added flavor!
To make turkey enchiladas, mix shredded leftover turkey with black beans, corn, and cheese. Roll the mixture in tortillas, place them in a baking dish, and top with enchilada sauce and more cheese. Bake at 350°F for about 20-25 minutes until bubbly and golden.
For a turkey salad, combine chopped leftover turkey with diced apples, celery, and walnuts. Mix in a dressing of mayonnaise, mustard, and a splash of lemon juice. Serve it on a bed of greens or as a sandwich filling for a refreshing meal!
To store leftover turkey, make sure it cools down to room temperature before placing it in an airtight container. It can be stored in the refrigerator for up to four days or frozen for longer storage. When freezing, consider portioning it out for easy use later!
