I'm going to a party this evening and am planning on making the profiterole puffs from last spring's Season's Best. I want to try the Chocolate Profiteroles from the Cooking for 2 and More Cookbook, but I have a question. After letting the mousse sit for 3 hours, can I use an electric mixer to make it fluffy. I don't have the Double Balloon Whisk, and I would rather not use the regular whisk for as long as it will take to form soft peaks. Has anybody done this?
 
I make my nouse in advance (with an electric mixer!) and put it in the fridge then fill the puffs when I'm ready. I have not had any problems doing it this way.
