Oh shoot! I was going to go to the farmer's market, today. I completely forgot. I knew there was something I wanted to do today, but I couldn't think of what it was. I doubt there are many vendors left by now. Bummer!ChefBeckyD said:Just picked up some sugar snap peas, strawberries, & rhubarb (think I'll make a crisp) at the Farmers Market - now I just need to figure out what to have with them!

Becky, I figured you didn't come here because I know you would never do that and not call me. Saturday I will not be back into town until late in the day. Sorry! (BTW, did you get my e-mail?)
Some quick and easy dinner ideas include stir-fried vegetables with chicken or tofu, pasta with a simple marinara sauce, or tacos with your choice of protein. You can also prepare a salad with grilled shrimp or a hearty soup using canned beans and fresh vegetables.
To make a healthy dinner in under 30 minutes, consider grilling or sautéing lean proteins like chicken breast or fish, and pairing them with steamed vegetables or a quick quinoa salad. Using pre-cut vegetables and whole grains can also save time while keeping your meal nutritious.
If you have picky eaters, try making customizable meals like build-your-own pizzas or taco bars where everyone can choose their own toppings. You can also prepare familiar dishes like spaghetti with meatballs or chicken tenders, which are often crowd-pleasers.
Incorporating more vegetables into dinner can be done by adding them to sauces, soups, or stir-fries. You can also serve a side salad or roasted vegetables alongside your main dish. Consider blending vegetables into smoothies or using them as a base for grain bowls.
Budget-friendly dinner options include pasta dishes, rice and beans, or casseroles that use inexpensive ingredients like potatoes, lentils, or seasonal vegetables. Buying in bulk and planning meals around sales can also help you save money while still enjoying a variety of meals.
