Biscuit Topping
1 cup baking mix
1T plus 1t sugar, divided
3 T milk
2 T butter or margarine melted
1 t lemon zest
1/8 t ground cinnamon

Filling
1 can cherry pie filling
1 can sliced peachers in juices, drained and cut in half
2 t lemon juice
1/2 t ground cinnamon
vanilla ice cream optional

Preheat oven 425. For Biscuit topping, combine baking mix, 1 T of the sugar, milk, butter, and lemon zest in 1 Qt Batter Bowl. Stir until the mixture forms dough. Combine the remaining 1 t sugar and cinnamon in flour/Sugar Shaker; set aside. For Filling, combine pie filling, peachers, lemon juice, and cinnamon in Classic 2 Qt Batter Bowl. Mix Gently. Microwave on High 3-4 minutes until Hot, stirring after 2 minutes. Pour into 8" Mini-Baker. Using medium Stainless Steel Scoop, Drop 6 scoops of dough over hot filling; sprinkle with the reserved cinnamon/sugar. bake 18-20 minutes until topping is golden brown. Serve with Ice Cream if desired.
