What's for Dinner Tonight? (Oct.29)

In summary, tonight we are going to have dinner with our friend's family and another family that are friends of ours. We are all bringing something and I am bringing a Pumpkin Dump Cake for dessert. Tomorrow night we are going to try my hand at spare ribs, while tonight we are going to have Hamburger Helper.

Tonight I have to use up some left over sausage so we will be having that along with some veggies. Not feeling overly creative today.

A friend of ours ( husband of my friend Michelle, who died from breast cancer) called yesterday and asked if we wanted to come over for dinner.

So - we are going to have dinner with him and his daughter...and another family that are friends of ours. We are all bringing something. I'm bringing a Pumpkin Dump Cake for dessert.

Tacos and Tostados - its mexican night in the Irish household! ;)

I think for tomorrow night I am going to try my hand at spare ribs, but for tonight...Hamburger Helper!! LOL!!

I plan on making a Chicken Divan casserole.

We do come up with good ideas from time to time!

The food network has a new tool/feature...you type in the meat, how long you want to take to make the meal, and what type of meal (breakfast, lunch, dinner) and it comes up with all sorts of recipes that meet your required specifications!

Go to this link. Food Network - Easy Recipes, Healthy Eating Ideas and Chef Recipe Videos : Food Network

It's called "Quick Meals" and it's on the right had side towards the top of the page... enjoy!

Here you go Kacey! I think this came from Allrecipes...but I've made changes, and I can't remember what the original was.....

Pumpkin Dump Cake

INGREDIENTS
1 (29 ounce) can pumpkin puree
1 teas. Korintje Cinnamon
1 1/4 teas. Cinnamon Plus Spice Blend
salt to taste
1 cup white sugar
3/4 cup packed brown sugar
3 eggs
1 (12 fluid ounce) can evaporated milk
1 (18.25 ounce) package yellow cake mix with pudding
1 cup chopped pecans or walnuts
1 cup butter, melted

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a mixing bowl, blend pumpkin, cinnamon, cloves, salt, sugar, eggs and milk. Pour mixture into a 9x13 inch baking dish. Sprinkle dry cake mix and nuts over the batter. Pour melted butter over the cake.
Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes and let cool. The cake will be "liquidy" at first, but will solidify as it cools.

We're having chipotle bbq grilled salmon with garlic mashed potatoes, steamed broccoli and dinner rolls. My MIL is coming for dinner so I had to come up with something to impress her.

We had BLT's & Mac N' Cheese. Quick & easy for a family that always sits down together for dinner but works such a CRAZY schedule!!

And as for the Chicken Divan that you're having, Brenda, that's a family favorite!!
