Salmon Cakes With Cool Lime Sauce

This recipe is in the It's Good for You cookbook and I really want to try it. It's in the appetizer section, but I want to make it as a main meal. I think it'd be great on top of some mixed greens and let the lime sauce serve as the salad dressing.

For those of you who have made this, or have the cookbook, what else do you think might be good in the salad, to bulk it up a little bit? Or, if I do them without the salad, what do you think would be some good sides for it?

I'm a big boy and am concerned that some mini salmon cakes over mixed greens won't be hearty enough all by itself for a meal.
 
My husband loves these!I've made them big (regular Salmon Pattie size) and so I just serve them with a veggie and starch (corn on the cob!), but I love your idea of serving them over Salad Greens! We will have to try that. If I did it that way, I'd probably serve them with a nice crusty French bread...mmm, maybe with some of the dipping oil!

I could eat the dipping oil all day! However, I'm on Weight Watchers now and I need to cut that out :( Plus, I'm making them for my roomies and one of them can't eat bread :(

I'm wondering how some crumbled goat cheese might be with it too...
 
How about some sliced cucumber, frozen peas and fava beans?

Sounds good! I was also thinking maybe some corn and black beans to give it a little mexican twist. Then, I came up with the idea of using them in salmon tacos -- corn tortillas with some cabbage slaw. Yum!

I saw something like that a few days ago that Bobby Flay was doing - looked like a good possibility. He of course was pouring habanero sauce over the salmon.

So I ended up putting these over mixed greens mixed with gala apples, toasted walnuts, dried cranberries, and a smidge of feta. Needless to say, it was delish. :)

We had this for dinner last night and I made them reg size and my hubby ate 3! and I deglazed the pan with Chardonay and they were soo yummy..
