This site has a listing of recipes found in each cookbook... but I couldn't find "Caramel apple cake" ...maybe you can find what you are looking for by finding the word "apple" through the page until you find the recipe? http://www.dwlz.com/WWinfo/pamperedchefpoints.htmlHTH

Here is the recipe that I have....maybe it's not even a PC recipe, or maybe it has an incorrect name.?!?


Caramel Apple Cake

2 (8 oz) cans Pillsbury Refrigerated flaky Biscuits (not Grands)

1/2 cup pecans (or you can use mixed nuts)

1/2 cup firmly packed brown sugar

1 stick melted butter or margarine

2 tbsp. light corn syrup

1 medium Granny Smith apple

Mixture of 2 tablespoons sugar and 2 teaspoons cinnamon

Melt butter in Family Skillet. Add brown sugar and corn syrup. Mix. Chop nuts and sprinkle on top. Core apple, chop, and sprinkle on top (use apple peeler corer and then chop up apples). Put sugar and cinnamon mixture in batter bowl or large bowl of colander and bowl set. Cut biscuits in half and toss in cinnamon/sugar mixture. Bake at 350 degrees for 20-30 minutes in the skillet. Remove from oven and invert on platter.
