2 plum tomatoes, sliced
12 oz (375 g) cooked chicken, diced (3 cups/750 mL)
1/2 cup (125 mL) chopped onion
1/2 lime
3/4 cup (175 mL) thick & chunky salsa
1 tbsp (15 mL) Pantry Southwestern Seasoning Mix
1 clove garlic, pressed
6 oz (175 g) shredded marble cheese (1½ cups/375 mL), divided
5 large flour tortillas (10-inch/25 cm)
1 can (14 oz/398 mL) refried beans
Assorted toppings such as shredded lettuce, sliced pitted ripe olives, snipped fresh cilantro and Avocado Lime Sauce (see Cook's Tips, optional)



Preheat oven to 425°F/220°C. Slice tomatoes using Ultimate Slice & Grate fitted with adjustable thin slicing blade; set tomato slices aside. Dice chicken using Chef's Knife. Chop onion using Food Chopper. Juice lime half into Classic Batter Bowl using Citrus Press. Add chicken, onion, salsa, seasoning mix and garlic pressed with Garlic Press. Microwave chicken mixture on HIGH 3-4 minutes or until hot, stirring occasionally. Stir in 1/2 cup/125 mL of the cheese.


Place one tortilla in centre of Large Round Stone. Arrange remaining tortillas in an overlapping circular pattern covering entire surface of baking stone. (Tortillas will extend off edge of stone by 5 inch/12.5 cm). Starting in centre, spread refried beans over tortillas in a 9-inch/23 cm square.


Spoon chicken mixture evenly over beans. Fold edges of tortillas up over chicken mixture. Place 16 tomato slices in rows over burrito. Sprinkle remaining cheese over burrito, covering completely. Bake 18-20 minutes or until cheese is melted and edges are browned. Serve with assorted toppings and Avocado Lime Sauce, if desired.
