Can stoneware be safely used after being exposed to fire smoke damage?

Click For Summary
SUMMARY

Stoneware exposed to fire smoke damage should be replaced due to the porous nature of the material, which can absorb smoke particles and affect food taste. High heat from the fire may also cause cracks or breaks in the stoneware, rendering it unsafe for use. While some methods, such as soaking in a baking soda paste or running the stoneware through a dishwasher without soap, may temporarily clean the surface, these do not guarantee safety. It is essential to prioritize food safety and replace any damaged stoneware.

Hello fellow chefers,

I have a customer that just had a kitchen fire and wanted to know if her stoneware needs to be replaced because of the fire smoke damage. She was told all plastic would need to be replaced but wasn't sure about the stoneware. Any of you know if the smoke damage is bad for stoneware or can it still be used. Thanks.

I'm pretty sure that the stones are ok. It seems like I remember something being said about this before, but the tried and true soak in a baking soda paste tends to work, and then, before she cooks "real" food on it, I would advise her to put like crescent rolls, spread out, all over the stone to pick up anything else that might be left after the soaking. AND, what I've done in the past - even though it's a no,no - is to run the stone through the dishwasher with NO soap and it turns out great.

It is recommended to replace stoneware that has been exposed to fire smoke damage. The porous nature of stoneware can absorb the smoke particles, making it difficult to clean and potentially affecting the taste of food cooked on it. Additionally, the high heat of a fire can cause stoneware to crack or break, making it unsafe to use. It is better to err on the side of caution and replace the stoneware to ensure the safety of your customer's food.
