I'm making this tomorrow for Easter (traditional, right?). Does anyone have a suggestion for a veggie for this? Maybe just a green salad. What kind of dressing do you think?

Braised eggplant with spiced yogurtUpdated from the the Turkish dish Imam bayaldi, which means "the priest fainted".

1 medium eggplant, cut into 1/2 inch slices, and salted then rinsed
1 cup diced canned tomatoes
3T olive oil
1/2 medium onion, fine diced
1 pressed garlic clove
2 tsp Moroccan seasoning (PC)
1T currants
2 T chopped fresh mint leaves
salt and pepper

spiced Yogurt
2/3 C. yogurt
1 t toasted cumin seed (micro 1 minute)
1/2 tsp ground coriander
2T chopped fresh cilantro.

Heat onion in half of the oil until golden, add tomato, garlic, moroccan seasoning, currants, mint, salt and pepper. Simmer 10 minutes. Heat the remaining oil in another skillet until very hot and add the eggplant. cook until golden brown. Mix the eggplant and tomato mixture. Allow to cool, and season to taste. To make the spiced yougurt, mix the yougurt with remaining ingredients, and serve with the eggplant as a side sauce.
