How about a gift in her name? http://www.treegivers.com
http://www.heifer.org/If she has had a passion in her life (animals, environment, children, et al) there are lots of other charities and gift giving in her name ideas that could be more tailored to her. So often we think of a gift of a thing... but perhaps she could appreciate a gift that gives more than a thing and really helps someone or something out in the world.
