Oh, ok! Thanks! That Jerk Seasoning marinade recipe earlier in this thread sounds good, so I think I'll go with that! Unfortunately I think it's just going to get darker with use and there may not be anything we can do about it. I soaked mine right away after using it, but haven't actually cleaned it yet. I have some black bits on mine b/c of the Teriyaki Sauce. It had lots of sugar in it and sugar burns easily so I figured that was why.
