I just made the Peanutty Brownie Pizza - - it looked beautiful before I cut it... but it would not cut neatly. I even refrigerated it a bit but the toppings stuck to the knife, pizza cutter... you name it, it stuck. It tastes decadent, but isn't as gorgious as it was uncut (we even drizzled the melted chocolate on top).

Does anyone have any tried & true tips? I was going to use this for a show. I'm sooooo glad I tried it at home first!

I think using the mix could be partly to blame (it was the Betty Crocker (box tops!) Original Supreme with Hershey's syrup pouch.... but actually, thinking about this, it was really just the peanutty topping that was the problem...

*sigh*

Whenever I make anything containing brownies, I cut with a plastice knife. Works every time. Don't know if that is the best idea at a PC show, but it works.

Thanks for the idea, I'll try it at home first of course.... but have you topped the brownies and did that stick (the brownie part cut fine with the pizza cutter - just the toppings stuck).

I've never made that recipe. I have basically used the plastic knife so the brownie doesn't fall apart. I have not done this at my shows. I have only done at home.
 
Hot wet knifeTry running the knife under hot water and don't dry it before cutting (or have a bowl of hot water handy). Admittedly, I haven't done that with this recipe in particular, but I've done it with other baked goods where the frosting has stuck (the new truffle brownies from "Stoneware Inspirations", for example) and it works beautifully. I repeat the procedure after every cut to keep the knife hot and wet (this sounds like a porn post :eek: - sorry!)

Read back and try the Brownie mix I used!!! Soooooo chewy and moist, didn't fall apart at all! :)

Sorry to ask for more detail, but how wet? Does it effect the brownie at all?
 
I just stick the knife under the water for about 5 seconds and then go right to the brownie. It has never affected the brownie at all as far as it getting too wet or sticky.

I made this at a demo at the county fair today! I just cut it with the pizza cutter, but instead of going all the way across in one motion, I roll it back and forth, I guess you'd say. That's how I have to do all my pizzas because I've always had trouble with keeping the topping pretty. But no one has ever complained!

However, since I didn't have access to a microwave, I just sprinkled the chocolate chips on top instead of melting them.

Also, the recipe I had didn't specify which size brownie mix to use. I had a 9x13 size and decided to bake 1/2 of it as the pizza and 1/2 in the med bar pan for my family. Still haven't decided if I should have used it all or not...

Which size box do y'all use?

The best idea I've heard is to cut the pizza BEFORE you put the toppings on. The toppings stay nice and neat and makes for a lovely presentation. Hope that helps!

I used the 9x13 size pan.

To ALL - - I served this and it was a HUGE hit! Didn't look as bad as I thought so I AM planning to make this at my kitchen show!

Sandy is this with the peanutty-cream cheese frosting? Do you frost invidually?
 
I have made the peanutty brownie pizza a lot. If you put all of the toppings on before you cut it, they will always move around. What I do is put the peanut butter spread on the brownie and then cut it with my pizza cutter. Then I place the bananas, candy bar, etc. on top. I have found that this also gives a more even distribution of the toppings. This recipe is awesome!! I have never had anyone who didn't like it.

Thanks Shawna! I just got the tip tonight at a meeting to just put cooking spray on the knife or cutter. So you would drizzle the chocolate afterwards?
 
what is the tip on how to put the banana's on there by using the egg slicer? I don't have the cookbook so I can't read it

I use Hershey's chocolate syrup instead of melting the chocolate. I am all about saving time and everyone has chocolate syrup on hand.
 
I use chocolate ice cream topping...in a jar... And yes...although its months too late...I drizzle the chocolate and put all the toppings except the peanut butter spread on after I cut the browning.
