and he then proceeded to tell me that I better not try any of it!!! As he wanted to keep it all to himself!!!! He tells me things are terrible when it becomes his new favorite meal! This is the easiest meal to make. We didn't have any tortilla chips so we just put some Fritos on the side. I think I have found my new favorite recipe to offer. Mixed 1 can med red chili ench sauce with 1 can green mild chili ench sauce. Worked great~!

If I didn't know better, I would say you married my brother. He does that too!

Yes my DH does that to :)

Sounds like my Dad. His other favorite thing to say to people they have for dinner is "I'm glad you came, we don't usually eat this well."

Frequently Asked Questions

What is Mexican Chicken Lasagna?

Mexican Chicken Lasagna is a delicious twist on traditional lasagna, incorporating layers of tortillas, seasoned chicken, cheese, and Mexican spices. It's often topped with salsa and can include ingredients like black beans, corn, and bell peppers for added flavor and texture.

Why did my husband say it was terrible?

There could be several reasons for your husband's reaction. It might be due to personal taste preferences, the specific ingredients used, or perhaps the dish didn't turn out as expected in terms of flavor or texture. It's important to communicate and understand his perspective to improve future attempts.

How can I improve the recipe for next time?

To enhance the Mexican Chicken Lasagna, consider adjusting the seasoning, using fresh ingredients, or adding more cheese for creaminess. You can also experiment with different types of tortillas or add more layers to create a heartier dish. Gathering feedback from your husband on what he didn't like can also help tailor the recipe to his taste.

Are there any common mistakes when making Mexican Chicken Lasagna?

Yes, common mistakes include using too much liquid, which can make the dish soggy, or not allowing enough time for the flavors to meld. Additionally, overcooking or undercooking the chicken can affect the overall taste. Following the recipe closely and ensuring proper cooking times can help avoid these issues.

Can I make Mexican Chicken Lasagna ahead of time?

Absolutely! Mexican Chicken Lasagna can be prepared ahead of time and stored in the refrigerator for a day or two before baking. You can also freeze it for longer storage. Just be sure to cover it well to prevent freezer burn, and adjust the baking time if cooking from frozen.
