Kids' Party Panini & Cookie Kisses

has anyone made panini with kids? or does anyone have suggestions for what to use as filling for a kid's party where we will be making mini panini and cookie kisses? thanks!!

I saw oneon the cooking network for Food 911. I believe Tyler Florence made a peanut butter and jelly one with bananas on it. It looked great and the kids loved it.
