Sounds like the Mex las is a big hit...and I wonder how it has gone over with your kids? My DS is 12 but very picky, so I am always on the lookout for food that he might eat. He likes tacos.

I think so. If he doesn't like onions you could omit them or finely chop them. My husband is a picky eater and he loves that dish.

I made it this afternoon with good intentions to take it to my hubby's school where he is principal to have them taste test it....I didn't get it made in time so my kids are now taste testing it for me...I was a little set back from it at first because it wasn't setting up but now a few hours later (and me draining off some excess enchilada sauce (with the baster) it looks perfect. It also didnt have much taste...I used the mild red enchilada sauce and it is kind of bland.. I sprinkled SW seasoning mix on it after wards and also drizzled some of the green enchilada sauce (I had bought both kinds) over the top..this seemed to help. My kids are eating it, and they are very picky...My 11 DD is eating it with torilla chips more like dip.
