I'm just thinking about making these tonight for a girls night - no show or demo involved.
If you've made them, do you have any helpful hints or suggestions? My plan is to do them as written, but not use the walnuts. I have tons of tomatoes in the garden and a huge bag of pesto in the freezer, so the only thing I should have to buy is the dough.

I have made them several times. I recommend the walnuts though. They are easy and delicious!!

I don't use the walnuts. I went to the store the other day and a choc. chip sized bag was $8.29!!! I just grate a little parmesan over the top. I love these, I will even eat them as a meal and they make the house smell great too!

They're delicious and the girls always love them. I've never made them with the nuts. Enjoy!

I made them at a show this week and LOVE them! Super easy! When I make them at home I don't use the nuts. At the show I actually forgot the mozzarella and just used the parmesan and they still tasted great!

I reccommend using pizza dough instead. I go to winco (they make pizzas in the store) and ask for a chunk of dough. It only cost 99 cents and taste much better.

Frequently Asked Questions

What is a Pesto-Tomato Galette?

A Pesto-Tomato Galette is a rustic, free-form tart made with a flaky pastry crust filled with fresh tomatoes, pesto, and often cheese. It's a versatile dish that can be served as an appetizer, main course, or even a side dish, making it perfect for gatherings like a Girl's Night.

How can I make the galette crust from scratch?

To make the galette crust from scratch, combine flour, salt, and cold butter in a bowl, mixing until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Chill the dough for at least 30 minutes before rolling it out to ensure a flaky texture.

What tips do you have for preparing the filling?

When preparing the filling, use fresh, ripe tomatoes for the best flavor. Slice them thinly and consider salting them lightly to draw out excess moisture, which helps prevent a soggy crust. Mixing in fresh basil or mozzarella can also enhance the taste of your galette.

Can I make the galette ahead of time?

Yes, you can prepare the galette ahead of time! You can make the crust and filling separately and store them in the refrigerator. Assemble the galette just before baking to ensure the crust stays crisp and flaky.

What are some good sides or drinks to serve with the galette?

Pair the galette with a fresh green salad dressed with a light vinaigrette for a refreshing contrast. For drinks, consider serving a crisp white wine, sparkling water with lemon, or a fruity mocktail to complement the flavors of the galette.
