Hi Lisa,I have a great recipe for a Banana Roll that I think Gracie will love. It's a moist and delicious cake filled with a creamy banana filling. Here it is:Banana Roll:Ingredients:- 3 large eggs- 1 cup granulated sugar- 1 teaspoon vanilla extract- 1 cup all-purpose flour- 1 teaspoon baking powder- 1/2 teaspoon baking soda- 1/2 teaspoon salt- 1 cup mashed ripe bananas (about 3 medium bananas)- 1/4 cup powdered sugarFor the filling:- 1 cup heavy cream- 1/4 cup granulated sugar- 1/2 teaspoon vanilla extract- 1/2 cup mashed ripe bananas (about 2 medium bananas)Instructions:1. Preheat your oven to 375°F. Line a 10x15 inch jelly roll pan with parchment paper and spray with non-stick cooking spray.2. In a large mixing bowl, beat the eggs, granulated sugar, and vanilla extract until light and fluffy.3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the egg mixture, beating until well combined.4. Stir in the mashed bananas until evenly distributed.5. Pour the batter into the prepared pan and spread it evenly with a spatula.6. Bake for 12-15 minutes, or until the cake is golden brown and springs back when lightly touched.7. While the cake is still warm, dust a clean kitchen towel with powdered sugar. Invert the cake onto the towel and gently peel off the parchment paper. Roll the cake up in the towel, starting at the short end. Let the cake cool completely in the rolled position.8. To make the filling, beat the heavy cream, granulated sugar, and vanilla extract until stiff peaks form. Fold in the mashed bananas.9. Unroll the cooled cake and spread the filling evenly over the cake, leaving a small border around the edges.10. Roll the cake up again, this time without the towel. Wrap it tightly in plastic wrap and refrigerate for at least 1 hour before serving.Slice and serve your delicious Banana Roll and enjoy! This recipe can also be made ahead of time and kept in the fridge for a few days. Just be sure to wrap it tightly in plastic wrap to keep
