has anyone heard of a Pampered Chef "Veggie Cake" recipe? I met a lady last night who loved it from a show she went to. She said it was a PC show, and the lady made a chocolate cake with carrots, zucchini, etc in it, and it was very good. I had never heard of it, but I pretended I knew what she was talking about (this was at a vendor event). I was wondering if it wasn't the cake that "SaladMaster" might have been sampling...a booth that was down from me. I obviously wasn't going to say that.

Any ideas?

Had she been drinking??:yuck: Good golly, veggies in chocolate cake?? Sounds like a late night infomercial for a weight loss gimmick!

Sorry, I'm no help. I just could resist commenting.

I have a non PC recipe for chocolate zucchini cake, and it's amazing. For the record :)

I'm googling but finding nothing that matches that. I've found chocolate-carrot cake and chocolate-zucchini cake, but nothing so far with both of those.

Frequently Asked Questions

What ingredients do I need for the Pampered Chef Veggie Cake Recipe?

The Pampered Chef Veggie Cake Recipe typically requires grated vegetables such as zucchini and carrots, flour, sugar, eggs, baking powder, baking soda, cinnamon, and oil. You may also want to add nuts or raisins for extra flavor and texture.

How do I prepare the vegetables for the Veggie Cake?

To prepare the vegetables, wash and peel them if necessary. Then, use a grater to finely grate the zucchini and carrots. Make sure to squeeze out excess moisture from the grated zucchini to prevent the cake from becoming too wet.

Can I substitute any ingredients in the Veggie Cake Recipe?

Yes, you can substitute ingredients based on dietary preferences. For example, you can use whole wheat flour instead of all-purpose flour, or replace sugar with a natural sweetener like honey or maple syrup. Additionally, you can use applesauce as a substitute for oil to reduce fat content.

How long should I bake the Veggie Cake, and at what temperature?

The Veggie Cake should be baked at 350°F (175°C) for approximately 30-40 minutes, or until a toothpick inserted in the center comes out clean. Baking times may vary depending on your oven, so it's a good idea to check for doneness a few minutes before the recommended time.
