Any gluten-free tropical recipes for a Celiac Disease host?

I have a show coming up where the host has Celiac Disease and wants me to do a gluten free recipe. She also is into the Taste of the Tropics theme show so I would lneed to be able to coordinate recipe and theme with one another. I saw some older threads out here about it but didn't find too much that sounded "springlike" or tropical to go with the theme. Has anyone done a recent show recipe that would be considered gluten-free that fits into the theme of the tropics??
 
Have you tried calling HO and seeing if their test kitchens have any ideas for gluten free "Taste of the Tropics" recipes? This might be one place to try.

Also, maybe if you do an internet search you can find something that will work.

The Jamaican Jerk Chicken Salad would be gluten free, unless there's gluten in the seasoning mix. And if she wanted the pasta variation, you can sometimes find Spelt or Rice pasta in the grocery store.

You might be able to find a specialty cookbook at your library, too. Any recipe, demoed with PC tools, is a good show recipe. ;)
