I have a host that wants to do a Cuban theme party. I'm not much of a theme girl to be honest but I'll do it. She's making mojitos and is looking for a Cuban recipe to go with it. Any suggestions?
 
In the new Latin Cook book there must be something....HTH :)

If you have the grill pan and press or could borrow them - This is a classic panini sandwich from Cuba!

Cuban Midnight Sandwich

INGREDIENTS

* 1 cup mayonnaise
* 5 tablespoons Italian dressing
* 4 hoagie rolls, split lengthwise
* 4 tablespoons prepared mustard
* 1/2 pound thinly sliced deli turkey meat
* 1/2 pound thinly sliced cooked ham
* 1/2 pound thinly sliced Swiss cheese
* 1 cup dill pickle slices
* 1/2 cup olive oil

DIRECTIONS

1. In a small bowl, mix together mayonnaise and Italian dressing. Spread mixture on hoagie rolls. Spread each roll with mustard. On each roll, arrange layers of turkey, ham, and cheese. Top each with dill pickle slices. Close sandwiches, and brush tops and bottoms with olive oil.
2. Heat a non-stick skillet over medium high heat. Place sandwiches in skillet. Cook sandwiches for 2 minutes, pressing down with a plate covered with aluminum foil. Flip, and cook for 2 more minutes, or until cheese is melted. Remove from heat, place on plates, and cut in half diagonally.


Also - Black Bean Soup is very Cuban. There is a recipe for black bean soup that is from PC - I remember making it several times, but I can't remember if it's in a cookbook, or if it was on one of the recipe cards we used to have.....

Cubans are big on Pork -- try a twist on the 10 minute pork tenderloin with a Cuban inspired Barbecue Sauce or seasoning (check out epicurious or AllRecipes or even the Food Network web sites for some ideas.) The new Creamy Mojito Torte is a great dessert or even the Pina Colada Upside Down cake could work.​
