"Pinko" De Mayo, Few Recipe Questions

In summary, my host is doing a theme this Friday and is requesting recipes for non-alcoholic and alcoholic drinks. She is also looking for a margarita recipe. However, she does not drink, so she needs someone else to provide the recipe.

I'm doing this theme with my host this Friday.

We are making the Confetti Mango Salsa w/ chips and also the Strawberry Coconut Tres Leche Trifle. Now, my host just asked me for any PC margarita recipes and non-alcoholic recipes PC has. :eek: Do you think any of them are simple and quick that I can also prepare them, or should I have her know that she'll need to make them if she wants them. She's expecting 10 or more people at this party. I found the Mock Mojitos and Triple Citrus Mojitos recipes and also a bunch of "pink" drink recipes, but I haven't found a margarita one. I don't drink and have no idea what to recommend to her. Non-alcoholic drinks, no problem. ;)

I also have never made the trifle before, but have browsed through a few threads that discuss it. Has anyone done this as a demo and have some tips for me?
 
2 cup tequila
2 can/bottle beer (corona)
1 can frozen limeade, undiluted
1 can frozen Lemonade, undiluted
2 liter white soda
1 can frozen cran raspberry juice

Mix all together in the family size quick stir pitcher. Enjoy!! They are super tasty and even pink!!
 
Oh also, when i make the strawberry tres leches trifle, I don't use lady fingers. I can't seem to find them at many stores! I have the host buy a one pound loaf of the frozen Sara Lee pound cake and have it thawed out for the show. Then I just chop it in cubes. Very good trifle!!!
 
With the drinks, have your host make a batch but then use the veggie wedger to wedge orange slices, egg slicer for strawberries, and the jar tongs (can't remember what they're really called) for cherries, put them on the cocktail toothpicks to garnish the drinks.

I have done the trifle many times and am doing it at my Pinko de Mayo and at a show on Saturday. I too use pound cake but I make one in the stoneware loaf pan, bring it to show, then trim the edges with a bread knife so the brown sides aren't in the trifle (it doesn't do anything bad to it, just helps keep it pretty). One caution is you'll want your host to get name brand jars of sweetened condensed milk and coconut milk (NOT CREAM!). I find the generic brand cans don't always cooperate with the can opener. Be sure to demo the salad and berry spinner with the strawberries!

It is delicious and you really can't screw it up. Have fun!

Is the strawberry trifle best if made ahead of time and refrigerated, or can it be demo'ed and eaten right away? which is best?
 
Personally, I like to serve the strawberry trifle right away. If it sits in the refrigerator too long, it can get soggy.
 
Don't forget to dye the Cool Whip and pudding mixture pink with food coloring.

the Strawberry-Coconut tres Leches trifle does NOT get soggy when made with pound cake, though the cream layer does settle and you don't see the pretty layers any more...

I was thinking of making it at the show, but I think I'm going to make it prior to the show, considering it's my first time making it. I like to try things ahead of time, except for yummy desserts, as I'll eat the whole thing myself lol.
