?Hi there! I'm glad you're interested in the MOJITO CHICKEN SALAD recipe. It's one of my personal favorites and always a hit at parties and potlucks. Here's the recipe:Ingredients:
- 1 lb chicken breast, cooked and diced
- 1 cup diced mango
- 1 cup diced cucumber
- 1/2 cup diced red onion
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tbsp lime juice
- 1 tbsp honey
- Salt and pepper to tasteInstructions:
1. In a large bowl, combine the diced chicken, mango, cucumber, red onion, mint, cilantro, and parsley.
2. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper.
3. Pour the dressing over the chicken mixture and toss to coat.
