HELP - I received a call from my Director who was clearly VERY sick, and is on the way to the doctor. She has a show tonight that she needs me to do for her. Hostess has purchased ingredients for what my Director called "Southwest Chicken Salad" ....which I did not find under the recipe search in CC.

I do not make any form of salads at my shows. I do not eat salads. I hardly eat vegetables of any kind! Therefore, would like to review the recipe and make me a "cheat page" before this afternoon; as I will not have time once I get off work and rush to get to this show!

Does anyone have this recipe?

TIA,
R.Wester

Southwest Chicken SaladGot it. It's the Cajun Chicken Salad from the Casual Cooking Cookbook. Since we don't have the Cajun seasoning anymore, she just uses the Southwestern instead.
Thank-x!

Frequently Asked Questions

What ingredients do I need to make Southwest Chicken Salad?

To prepare a Southwest Chicken Salad, you will need cooked chicken (grilled or rotisserie), mixed greens (like romaine or spinach), black beans, corn, diced tomatoes, avocado, shredded cheese (like cheddar or Mexican blend), and a dressing of your choice (such as ranch or a lime vinaigrette). Optional toppings include tortilla strips and cilantro.

How do I cook the chicken for the salad?

You can cook the chicken by grilling, baking, or sautéing. If grilling, season the chicken with your favorite spices and grill for about 6-7 minutes on each side until fully cooked. For baking, preheat your oven to 375°F (190°C) and bake for about 25-30 minutes. Once cooked, let it rest before slicing or shredding.

Can I use canned ingredients for the salad?

Yes, using canned ingredients can save time. You can use canned black beans and corn; just be sure to rinse and drain them before adding to your salad. This will help reduce sodium content and improve flavor.

What dressing works best for Southwest Chicken Salad?

A creamy ranch dressing or a zesty lime vinaigrette pairs well with Southwest Chicken Salad. You can also make your own dressing by mixing olive oil, lime juice, honey, and spices for a fresh flavor.

How do I assemble the salad?

Start by placing a base of mixed greens in a large bowl or plate. Then, layer on the cooked chicken, black beans, corn, diced tomatoes, avocado, and shredded cheese. Drizzle your chosen dressing over the top and toss gently to combine. Add any optional toppings like tortilla strips or cilantro before serving.
