Sorry Stephanie, this is the first time I saw this thread!! OMG! They were very good! Loved it! The lime and cilantro, oh yummy!Chef Stephanie Petersen said:I had a real gringo ask me, "When is Cinco de Mayo anyway?" Oh my stars... What a great idea for a theme show! I would serve fajitas. Produce is really cheap where I live so we do a lot of vegetable fajitas. I posted this in another thread, but here is my recipe:
veggie fajitas using marinated portabello mushroom as the meat alternative I use about 8 oz mushroom to 2 bell peppers and one onion sliced really thin. I would marinate mushrooms in a southwest blend something like this:
juice of one lime and zest
1 clove fresh pressed garlic
1/2 cup organic olive oil
2 tsp chipotle rub or southwestern
you could also serve a fresh salsa like mango or cantelope for a change of flavor.
Basic salsa
3 cups chopped fruit or tomato
1 medium chopped onion
1 jalepeno seeded and minced
1 clove fresh pressed garlic
juice and zest of one lime
1/2 cup minced cilantro
salt and pepper to taste
1 tsp oregano
1tsp ground cumin
2 tsp chipotle rub or southwestern
You can use Chicken shrimp or beef in place of the mushroom and just rub some of the chipolte or southwest seasoning on them before you slice them thin or if you marinated them use the marinade recipe above.
Miss Chef used this recipe for a show so you could ask her how it went.
A Taco Ring is a fun and festive dish made by wrapping crescent roll dough around seasoned taco meat, cheese, and toppings. To make one, simply cook your choice of ground meat with taco seasoning, then place the mixture in a circle on a baking sheet. Lay out the crescent roll triangles around the meat, fold them over, and bake until golden brown. Serve with salsa, guacamole, and sour cream for dipping!
In addition to the Taco Ring, consider serving Mexican street corn, guacamole and chips, a fresh salsa bar, and mini quesadillas. You can also include a refreshing drink like a margarita or a non-alcoholic agua fresca to complement the meal.
Pampered Chef offers a variety of kitchen tools that can enhance your Cinco de Mayo party. Use their stoneware for baking the Taco Ring, a food chopper for preparing fresh salsa, and a mix n' chop for cooking your ground meat. Additionally, consider using their serving platters and bowls to present your dishes beautifully.
To engage your guests, consider hosting a taco bar where they can customize their own tacos with various toppings. You can also set up a DIY margarita station, or organize games like a piñata or trivia about Mexican culture. Incorporating music and decorations that reflect the festive spirit of Cinco de Mayo will also enhance the atmosphere.
During your Cinco de Mayo party, you can showcase Pampered Chef products by using them in your cooking demonstrations. Share recipes that highlight the versatility of the products and offer guests the opportunity to place orders. You can also provide catalogs and samples, and encourage guests to host their own parties to earn free products.
