Can anyone help me with some sort of documented review on the forged cutlery. I have a hostess who wants to compare to Henckels, etc.

As far as I know there arent any reports---however, you get the LIFETIME warrenty with PC...many companies don't offer that. And if you dont like it within 30 days you can return it.

THere is some information on CC under product information about the knives themselves. But I know you are looking for a comparison chart.
 
That sounds like something Cook's Illustrated would have, too. They have great product charts and do occasionally include our products in their reviews (I know they've done our Professional Grill Pan and Rectangular Baker within the last few years).

They can return it postage paid within 30 days...they still have up to that first year mark to return it postage paid by them. I point this out to anyone who is "on the fence" about a rather large purchase. (forged cutlery, UM, cookware, etc.)

My pastor's wife did this with her US&G...she had it for about 9 months and decided that she just didn't use it enough to justify the cost. She mailed it back in and exchanged it for something else!

What I tell my customers is that when it comes to a high quality knife it has to feel good in their hands. All of the leading forged steel knives have the same key features; the major difference is in how balanced and comfortable they feel in one's hands....and of course the customer service and warranty behind the products. Ours are so amazingly comfortable to hold and easy to work with. Also, I don't know of any company that lets folks return a product within a full year of using it. Talk about offering a test drive!
