White Chocolate Raspberry TartHi Amy,

I first sampled this recipe at New Director Academy. I had never used my pan but have used it several times now for this recipe. It is so easy to make and soooo impressive to serve your guests. I haven't done it at a Show but it's great to serve or take for dessert when going to a friend's house. Enjoy!

White Chocolate Raspberry Tart

Crust

2 cups (500 ml) finely chopped crème-filled chocolate sandwich cookies (about 20 cookies)
¼ cup (50ml) butter or margarine, melted

Filling
3 cups (750ml) frozen, whipped topping, thawed, divided
¾ cup (175ml) white chocolate chips
½ cup (125 ml) sour cream
¼ cup (50 ml) semi-sweet chocolate chips
1 tsp (5 ml) vegetable oil
1 cup (250 ml) fresh raspberries
Icing sugar

1. For crust, finely chop cookies using Food Chopper. In Small Batter Bowl, combine cookie crumbs and butter; mix well. Press into bottom and up sides of Tart/Quiche Pan. Refrigerate until ready to fill.

2. For filling, place 1 cup of the whipped topping and white chocolate chips in Classic Batter Bowl. Microwave on High 1 minute or until melted and smooth, stirring after each 20-second interval. Cool slightly (mixture should be slightly warm). Fold in remaining whipped topping and sour cream. Spread white chocolate mixture over crust.

3. Place semi-sweet chocolate chips and oil in Small Micro-Cooker. Microwave uncovered, on High 30-60 seconds or until melted and smooth, stirring after each 20-second interval. Drizzle chocolate mixture over filling. Arrange raspberries around edge of tart. Refrigerate at least 1 hour or until set. Sprinkle icing sugar over raspberries with Flour/Sugar Shaker just before serving.

Yield: 12 Servings

You can also get the Easy Pies and Tarts recipe cards. But you better get them soon.

Peggy,

Hi there! As a fellow Pampered Chef consultant, I have plenty of delicious recipes to share with you for your new pan! One of my favorites is a simple yet flavorful roasted vegetable medley. Just toss your favorite vegetables (such as bell peppers, zucchini, mushrooms, and onions) with some olive oil, garlic, and your choice of herbs, then roast in the pan for about 20 minutes. Another great option is to make a savory frittata with eggs, cheese, and your choice of vegetables and meats. The possibilities are endless with this versatile pan. Happy cooking!

Frequently Asked Questions

What is a basic recipe for a quiche using a tart pan?

A basic quiche recipe involves whisking together 4 large eggs, 1 cup of milk or cream, salt, and pepper. Preheat your oven to 375°F (190°C). Roll out your pie crust and fit it into the tart pan. Pour the egg mixture into the crust and add your choice of fillings, such as sautéed vegetables, cheese, and cooked meats. Bake for 30-35 minutes until the filling is set and the top is lightly golden.

Can I make a sweet tart in a quiche pan?

Yes, you can make a sweet tart in a quiche pan! For a sweet tart, use a shortcrust pastry as the base. Fill it with a mixture of fresh fruits, custard, or chocolate ganache. Bake according to the recipe instructions, usually at 350°F (175°C) for 25-30 minutes, or until the crust is golden and the filling is set.

What are some popular fillings for savory quiches?

Popular savory quiche fillings include combinations like spinach and feta, ham and cheese, or mushrooms and Swiss cheese. You can also experiment with ingredients like roasted red peppers, zucchini, or caramelized onions. Just ensure that any vegetables are cooked and drained to avoid excess moisture in the quiche.

How do I prevent my tart crust from getting soggy?

To prevent a soggy tart crust, you can blind bake the crust before adding the filling. This involves pre-baking the crust for about 10-15 minutes at 375°F (190°C) with pie weights or dried beans on top of parchment paper. Additionally, brushing the crust with a beaten egg before adding the filling can create a barrier that helps keep it crisp.

Can I use a tart pan for other types of recipes?

Absolutely! A tart pan is versatile and can be used for various recipes, including cheesecakes, fruit tarts, and even savory dishes like frittatas. The fluted edges and removable bottom make it easy to present and serve a variety of baked goods.
