I JUST NOW got a booth for a BRU event on Saturday. Unfortunately, the event is during a show I already have scheduled.

Sooo.... how bad would it be for my husband to man the booth? He would pass out business cards and info and demo a couple of products (but no actual food to give out or anything)....

would that be bad??
 
Why would that be bad? I had someone ask me to do a booth last year and I already had a show booked. The organizer said, "That's ok, I'm sure my (adult) daughter could handle it." I only got 1 order out of the fair and no shows, but the daughter just signed up as my first recruit - almost a year later.
 
If your husband is willing I would go for it!! I dont even do demo's at my booths, just talk to people and book shows.
 
Do you try to sell stuff too or just try to get bookings?

Just try to get bookings. I'm so new that I don't really have any excess stuff I can sell.
 
I brought excess stuff last year, it didn't work out well, and people wanted things cheap. This year I will only go to book shows and sell from book.
 
I would ask him to do the normal suggestions (most of the time) Stand out front .. don't sit.. etc.
 
If your husband is willing to do that - great! And good for him for jumping in. Mine is behind me but don't think he would ever man a booth for me.
