I just spoke to my Host for Saturdays show. She has 15 confirmed and is waiting on more! I'm so excited but wondering if the salad will be enough. I know its only a taste they get but still.

Thanks for your ideas!

I don't know if the Thai Chicken Salad is enough but the Mandarin Pasta Salad is definately enough!

The Thai Chicken salad should be enough. It makes alot and it is easy to double if you are worried about it. Ask her to get more of a few items and you should be okay.

They are only supposed to get a taste anyway and it would be more than enough. We made it for our cluster meeting and there was around 15 people there.

Frequently Asked Questions

What ingredients do I need to make Thai Chicken Salad for 15 or more people?

To make Thai Chicken Salad for a large group, you will need cooked chicken (about 4-5 pounds), mixed greens, shredded carrots, red bell peppers, cucumber, green onions, cilantro, and peanuts. For the dressing, gather ingredients like peanut butter, soy sauce, lime juice, honey, and sesame oil. Adjust quantities based on your guests' preferences.

How can I prepare the Thai Chicken Salad in advance?

You can prepare the salad ingredients in advance by chopping the vegetables and cooking the chicken a day before serving. Store the chopped ingredients separately in airtight containers in the refrigerator. Mix the dressing in advance as well, but combine the salad ingredients and dressing just before serving to keep everything fresh and crisp.

Can I make the Thai Chicken Salad vegetarian or vegan?

Yes, you can easily make the Thai Chicken Salad vegetarian or vegan by substituting the chicken with tofu or chickpeas. Use a plant-based protein and ensure that the dressing is made without honey to keep it vegan. You can also add more vegetables or nuts for added texture and flavor.

What can I serve alongside the Thai Chicken Salad for a complete meal?

To create a complete meal, consider serving the Thai Chicken Salad with spring rolls, rice noodles, or a side of jasmine rice. You could also offer a light soup, such as a miso soup, or a refreshing fruit salad to complement the flavors of the Thai Chicken Salad.

How do I store leftovers from the Thai Chicken Salad?

If you have leftovers, store the salad in an airtight container in the refrigerator. It's best to keep the dressing separate to prevent the salad from becoming soggy. Consume the leftovers within 2-3 days for optimal freshness and flavor.
