You can make it several ways. In order to prepare it...it must soak in cold water for 3 days. Every 4 hours you must drain the water and start again. This helps to diminish the salt of the cod fish. When you are looking to purchase the baccala, pick the thick pieces.BigJohn said:Now I need help from all my Italian friends here. What are some ideas for the preparation and serving of Baccala, I'd like to use rustic recipes if possible, it is going to be part of my Christmas Eve feast this year.

I'm not sure his wife, Chelsea Field, would be real happy about this.
But I liked him in Quantum Leap but not so much in Enterprise.
Rustic Baccala, or salted cod, is a traditional dish in many cultures, especially in Italian and Portuguese cuisine. It is popular for Christmas Eve as it symbolizes abstinence from meat, aligning with the tradition of serving fish on this day. The dish is often prepared in various ways, showcasing the versatility of salted cod and its ability to absorb flavors from accompanying ingredients.
To prepare Rustic Baccala, start by soaking the salted cod in cold water for 24 to 48 hours, changing the water several times to remove excess salt. After soaking, you can cook it by poaching, baking, or frying. Common preparations include adding ingredients like tomatoes, olives, garlic, and potatoes to create a flavorful dish that can be served as a main course or appetizer.
Some popular Rustic Baccala recipes include Baccala alla Griglia (grilled salted cod), Baccala Mantecato (creamed salted cod), and Baccala con Patate (salted cod with potatoes). Each recipe highlights different cooking methods and flavor profiles, allowing you to choose one that suits your taste and the preferences of your guests.
Yes, you can prepare Rustic Baccala ahead of time. Many recipes can be made a day in advance, allowing the flavors to meld. Store the prepared dish in the refrigerator and reheat it gently before serving. This can save you time on Christmas Eve and ensure that you can enjoy the festivities with your family and friends.
Rustic Baccala pairs well with a variety of side dishes. Consider serving it with a fresh arugula salad, roasted vegetables, or a hearty bread to soak up the flavors. Additionally, a side of polenta or creamy mashed potatoes can complement the dish nicely, creating a well-rounded and festive meal.
