Can someone please post the recipe for Tex-Mex Melts? TIA.

here is the one that I use...

1 large tomato, chopped (about 1 cup)

1 small onion, chopped (about 1/2 cup)

2 Tbsp. chopped fresh cilantro

1 Tbsp. finely chopped seeded jalapeño peppers

1 Tbsp. lime juice

1/4 cup Four Cheese Mexican Style Cheese

36 Wheat Crackers


COMBINE tomatoes, onions, cilantro, peppers and lime juice; cover. Refrigerate at least 1 hour.

TOP each cracker with 2 tsp. of the tomato mixture; sprinkle with 1 tsp. cheese. Place six of the topped crackers on microwaveable plate.

MICROWAVE on HIGH 15 sec. or until cheese begins to melt. Repeat with the remaining topped crackers.

Here is the recipe card for Tex-Mex Chicken Melts.

You can print them out on blank 4 x 6 index cards

I started doing it this way after a guest told me that the full page recipe is hard to fit into her recipe card box.

I did one recipe on Microsoft Word and just used that as a templet

I love handing these out at the shows because after I print them, I stamp them with my info on them, this way they will have my information at hand at any time.

The Tex-Mex Melts are really good. When I done them I put WAY to much onion in them though.
