I want to have pasta with Pesto tomorrow night...BUT i don't have a pesto recipe...i have the basil and the pine nuts...so what do i do with them? Thanks!
 
Blend a little EVOO and some garlic - simple and delish - I would grill up some shrimp as well to top it off and chop up some fresh tomato and mix it with the pasta and pesto - maybe a little bread crumbs on top.
 
My recipe is 1 cup of basil leaves (about a good hand full), 2/3 cup olive oil, 2-3 cloves of garlic, 3/4 cup pine nuts or walnuts, 3/4 cup parmesan cheese, and a little salt. Combine all in a food processor and whirl til smooth. I freeze it this way in little snack bags (doubled and then all little bags into a larger freezer bag), using three of our medium scoops to fill each bag for two of us. When I am ready to use it, I let it get to room temperature and then add some of the hot pasta water to thin it to more of a sauce consistency for adding to pasta. Delicious :)
