Next month one of my hosts wants me to do a "Hurried Mom" theme. Demo one recipe that's fast and easy, and give recipe copies of others. Because I'm a Mom and ALWAYS in a hurry - I have my favorites, but I would like to hear from you all your suggestions.

Mini meatloaves! Just did these the other night and posted a thread by that name under "Recipes". I think it's a new favorite. And it was really fast AND cheap. :)
 
I have got to tell you that I absolutely love making the Jamaican pork tenderloin recipe from Stoneware inspirations cookbook. It's not very spicy, my 3 year old can eat it and although I would love to be able to say that there are leftovers enough to actually make the Islander Salad with the 2nd loin, we never have enough leftover to do it. It is just delicious and I sometimes make the 2nd loin with lemon pepper seasoning instead or just garlic, s & p so we have a variety of flavors. I used our new jerk seasoning with the maple syrup separately just for my DH and I because we love the spiciness of it and made up a separate non spicy sauce for my 3 year old.
Any busy mom could get this going prepped and in the oven in 10 minutes and in 25 minutes, it's done and you have your apples, onions and sweet potatoes done too.
I also think that any of the ring recipes are super stand bys for busy days and I always love doing my own "lazy day lasagna" in the rectangle baker. There is no boiling the lasagna noodles at all and you don't use the "no boil" noodles either. It does require you to think 1 day ahead though because it sits in the refridge overnight.

I just made the 30 minute chicken for our supper. I will admit that I thought handling a whole chicken was gross but it did come out delicious! Plus the deep covered baker will do a great thing for your sales totals!:D

The Greek Lemon Chicken soup in It's Good for You is soooo fast if you have leftover cooked chicken.
The Taco Soup from the Power Cooking demo is fast if you have ground beef already cooked.
Have you ever done lasagne roll-ups? I actually saw them demo-ed by kids on PBS, but they're delicious AND easy & quick.
Fettucini Alfredo is another that is sooo quick and really yummy if you use cream cheese as the sauce base. It's great for those nights when nothing has been defrosted.

Sell the cut-n-seal! Tell them any time they have time to make PB&J to make a few extras and throw 'em in the freezer!

Teach them about the 1 minute egg in the Prep Bowls in the nuker! I mentioned that to my mom the other day and she was like, "NOT new news!" Who knew? Not me!

Most of us create word documents and then upload them. Your other option is to simply type the recipe into a regular reply and then after comments put it in whatever format you want.

If you do a search in the file section (click files in the menu) on kids you may find a document that you like and simply need to add your additional ideas.

I always promote the side by side calzones for busy moms -- one can be simple for the kids and one for the grown ups filled with veggies! Best of all -- you can stuff your calzone with whatever you have on hand like you would with a ring.

Sloppy joes, chicken and broccoli, pizza ingredients, chic pot pie ingredients.

Mandy,Can you tell me more about side by side calzones?? Two pizza crusts - each folded over with stuffing inside? On the large round stone?
 
The "official" recipe follows. BUT -- think of it as an anything goes kind of recipe. I bet you could use any of the fillings for the braids and rings, too. Just substitute the croissant pasty for the dough.

Italian Sausage Side-by-Side Calzones Recipe (season's best fall 06)

1/2 cup chopped onion
1 pound hot turkey Italian sausage (about 4 links)
1/2 cup diced green bell pepper
1/2 cup pitted ripe olives, sliced
1 can (8 ounces) pizza sauce
1 garlic clove, pressed
2 packages (13.8 ounces each) refrigerated pizza crust
1 cup (4 ounces) shredded mozzarella cheese
1 tablespoon Pantry Basil Oil
1/4 cup (1 ounce) grated fresh Parmesan cheese


Preheat oven to 400°F. Chop onion using Food Chopper. Remove and discard casings from sausage. Cook sausage and onion in Family (12-in.) Skillet over medium-high heat 8-10 minutes or until sausage is lightly browned and no longer pink, breaking into crumbles. Drain and set aside.

Dice bell pepper using Chef's Knife. Slice olives using Egg Slicer Plus®. In Classic Batter Bowl, combine sausage mixture, bell pepper, olives, pizza sauce and garlic pressed with Garlic Press; mix well.

Lightly flour Rectangle Stone. Unroll one package of pizza crust across baking stone. Gently stretch dough into a 10 x 14-inch rectangle. Sprinkle mozzarella cheese over dough to form two lengthwise rows, leaving a 2-inch separation between rows down center and a 1-inch border around outside edges. Using Large Scoop, scoop filling mixture evenly over both rows of cheese. Unroll second package of pizza crust and carefully place over first crust. Match edges of dough around edges; press to seal around edges and down center.

Using Pizza Cutter, cut down center of dough to form two strips. Lightly spray dough with basil oil using Kitchen Spritzer. Grate Parmesan cheese over top of dough using Deluxe Cheese Grater.

Using Serrated Bread Knife, cut five 2-inch slits in top of each calzone to vent. Bake 22-25 minutes or until deep golden brown. Remove from oven to Stackable Cooling Rack; cool 10 minutes. Serve warm.
