I have a lot of eggplant and need some recipe ideas. I've got the regular big eggplants and the skinny japanese eggplants. I want something other than eggplant parmesan, fried eggplant, moussaka, or curry. Any ideas?
 
I have a delicious recipe in my cookbook I got from Barbados, but it's home. I'll check tonight and post it.
 
Not a recipe, but an idea! My aunt and I were just talking about this yesterday (we love to talk recipes, and I learned alot about cooking by sight and taste from her.)
She does stuffed eggplant. Just uses a recipe like you would for Stuffed Peppers and hollows out a little bit of the middle of the eggplant and stuffs it, and then pours over a tomato sauce and bakes it. She also does this with Zucchini. I thought both ideas sounded good, and want to try them!

Slice them lengthwise (peel first or not - your choice) about 3/4 inch thick and brush with the garlic canola oil and place on grill over direct low heat. Cook with lid down until done turning once or twice. Sprinkle (I guess I mean grind!) with the new salt and pepper. Yum.​

peel, slice, bread and fry in small amount of oil. you can top with grated cheese if you like. I use it in place of squash for a cassarole.
 
Eggplant fritters...just came across the recipe in one of my books yesterday! YUMMY!

Eggplant Fritters

Put eggplants into cold salted water (whole). Boil until they can be pierced with a fork. Peel, mash, and season with salt, pepper and butter. Add one beaten egg and 2-3 tablespoons of flour. Drop by spoonfuls onto a hot greased griddle.

Don't laugh, but on Ebay once I bought a huge lot of cookbooks. Honestly there must have been over 100. I kept the ones I wanted and passed along the rest (heck it was only $25 for all of them including shipping).

This little paperback cookbook called "Old Timey Recipes" was in there. All the recipes are hand written in (although it is copyrighted from mid 1980s the original copyright was 1969.) The eggplant recipe I think came from someone's "very old undated cookbook".

I thought it sounded interesting myself---but I don'thave any eggplant. HA!
Enjoy it, please let me know how you and the family liked it.

I just recently roasted eggplant, broccoli, grape tomatoes and onions. I sprayed w/ evoo and sprinkled crushed peppercorn and garlic rub (400 for 30 minutes). Added it to chunks of sauteed chicken and cannellini beans. YUMMMMM!
 
The South Beach Diet Cookbook has a marvelous Chicken and Egplant Casserole that I
do in our large bar pan. It feeds a crowd well, and is great frozen and reheated. In fact, they recommend you make a double batch to have some to put in the freezer for a second meal. I generally purchase the smaller, thinner eggplants rather than ones that
have lots of seeds in the middle. You know, it is the difference between a plant that was allowed to grow til 8" long versus 12" and several pounds heavy.

Hey Linda! Finally remembered the recipe....:o

From my "Cooking in Barbados" cookbook -

Eggplant casserole (delicious! :))

4 slices bacon
3 small onions, chopped
3 med green peppers, chopped
1 large eggplant, cubed
2 tsp salt
1/4 tsp black pepper
8oz tin tomatoes
grated cheese
1-1/2 cups cornflakes, crushed

Fry the bacon until crispy and then set aside to use on the top. Fry the onion and green pepper in the bacon fat for 5 minutes. Peel and cube the eggplant and add it to the pan with the salt, pepper, tomatoes and 1 cup of water. Cover and cook for 10 minutes until the eggplant is nearly tender. Pour into a shallow casserole and sprinkle with the cheese, cornflake crumbs and crumbled bacon. Bake uncovered at 350F for 20-30 minutes. Serves 4.
