pamperedlinda said:I have a lot of eggplant and need some recipe ideas. I've got the regular big eggplants and the skinny japanese eggplants. I want something other than eggplant parmesan, fried eggplant, moussaka, or curry. Any ideas?

vwpamperedchef said:Don't laugh, but on Ebay once I bought a huge lot of cookbooks. Honestly there must have been over 100. I kept the ones I wanted and passed along the rest (heck it was only $25 for all of them including shipping).
This little paperback cookbook called "Old Timey Recipes" was in there. All the recipes are hand written in (although it is copyrighted from mid 1980s the original copyright was 1969.) The eggplant recipe I think came from someone's "very old undated cookbook".
I thought it sounded interesting myself---but I don'thave any eggplant. HA!

For beginners, simple recipes like roasted eggplant with olive oil and garlic or eggplant parmesan are great options. You can also try making eggplant stir-fry with your favorite vegetables and sauces, or a basic eggplant salad with tomatoes and feta cheese.
Eggplant can be prepped in various ways for meal prep. You can roast or grill slices of eggplant and store them in the fridge for use in salads, sandwiches, or as a side dish. Additionally, you can cube eggplant and sauté it with other vegetables to create a delicious stir-fry that can be portioned out for the week.
For special occasions, consider making stuffed eggplant with a filling of quinoa, vegetables, and spices, or a creamy eggplant dip like baba ganoush. You could also prepare an eggplant lasagna or moussaka for a hearty main dish that will impress your guests.
Yes, eggplant can be used in desserts! One unique way to incorporate it is by making eggplant brownies, where the eggplant adds moisture and richness without a strong flavor. You can also use pureed eggplant in cakes or muffins for added nutrition.
When selecting eggplant, look for ones that are firm, shiny, and free of blemishes. Smaller eggplants tend to be sweeter and less bitter. To store, keep eggplants in a cool, dry place, ideally in the refrigerator, and use them within a week for the best flavor and texture.
