I did the Spinach Carbonara Pizza the other night. The directions said to put the lid on the batter bowl to wilt the spinach in the microwave. I was a little nervous about the outcome, but it worked great.

That sounds very good. I did a brownie recipe and stirred in Nutell, which is the consistency of peanut butter. I swirled it in the pan, "marble-like", (I hope I'm explaining it clearly). It was fabulous and super moist.
There are quite a few "metal utensil safe" non stick. I have a set of hard anodized that is metal utensil safe also NSF (restuarant quality) and it is no problem. I use whisks, etc all the time.:)
I have used the Debbie Meyer Green Bags for about a month and they really do work. I was very skeptical but love them so much I just ordered 2 sets of her "green" storage containers. They are reuseable indefinitely, the bags reuseable 10 times.
