I made this for my Grand Opening. One of my guest asked what brand cake mix it was (it was a store brand!) She couldn't get over how moist it was!

I also use olive oil and have never had a problem with smoke. I also put the oil on the chicken, not the pan, but that doesn't appear to the problem either. I'm guessing your pan is too hot.

My buisness has gone COLD. I only have a couple leads for new shows. My last two shows have BOMBED. Any suggestions with how to restart my business? I just started in January so it seems to have gone cold fast.

I'm going to guess there is a big difference between cooking a whole frozen chicken and a couple frozen chicken breasts. I'm going to be attempting white chicken chili with frozen breasts tonight :( Not thighs and no time to thaw them.
