stacywhitlow said:I have a very plain version.
chopped chicken
chopped celery
mayonnaise
sweet pickle relish w/very little juice
salt & pepper to taste
PamperChefCarol said:Even easier...
chopped chicken
chopped celery and onion
Hellmans Mayo
salt and pepper to taste.
Nothing fancy, no fruit or nuts, just simple chicken salad.
I know there are some who are Mircle Whip fans, but I am a diehard Hellmans gal!

Chicken breast cooked and shredded
Bacon pieces crumbled
Hard boiled eggs
Finely chopped celery
Finely chopped green onion
Mayo
salt and pepper to taste
I just made this for a mom's get together on sliced french bread. We had leftovers on french bread with melted cheese from the oven. Very tasty. My kids will eat anything with melted cheese on it.

Chef Kearns said:I love the PC recipe Curry Chicken Salad. Not the warm version. It does have Granny Smith apples and cranberries in it. I like it. My boys (ages 9 and 10) like it, too. My four year old can't get enough. She wil eat it like a lettuce wrap. The boys have to have it with crackers though.
For a basic chicken salad, you will need cooked chicken (shredded or diced), mayonnaise, diced celery, diced onion, salt, pepper, and optional ingredients like grapes, apples, or nuts for added flavor and texture.
You can cook the chicken by boiling, baking, or grilling. For boiling, place the chicken in a pot of water, bring it to a boil, and simmer until fully cooked (about 15-20 minutes). For baking, season the chicken breasts and bake at 375°F for 25-30 minutes. For grilling, cook on medium heat for about 6-7 minutes per side.
Yes, you can prepare chicken salad ahead of time. It can be stored in the refrigerator for up to 3 days. Just be sure to keep it in an airtight container to maintain freshness.
Chicken salad can be served in various ways. You can enjoy it on a bed of lettuce, in a sandwich, in a wrap, or with crackers. It also pairs well with fresh fruit or a side of chips for a complete meal.
You can customize your chicken salad by adding different ingredients such as diced apples, grapes, nuts, or herbs like dill or parsley. You can also experiment with different dressings, such as Greek yogurt or mustard, to change the flavor profile.
