I picked out the Catfish Po' boy sandwiches from the new 29 minutes cookbook. I have never heard of melba bread nor could I find it at the store today.
 
Melba Toast - kinda like crakers, but made from toast - really crunchy toast like crackers.

What is Melba Toast?

MelbaMelba toast is a thin, crisp toast that is now packaged and sold in stores next to crisp breads and crackers. Auguste Escoffier created MelbaMelbaMelba toast. He was a friend of Swiss hotelkeeper Cesar Ritz and his wife, Marie Ritz. When Marie commented that she could never find thin enough toast, Escoffier invented what is now known as MelbaMelbaMelba toast, and called it "Toast Marie" after his friend's wife. Escoffier renamed it "MelbaMelbaMelba" toast when he was working with Cesar Ritz at London's Savoy Hotel and Dame Nellie MelbaMelbaMelba was staying there.

It was reported that singer Dame Nellie MelbaMelbaMelba ate MelbaMelbaMelba toast regularly when she was sick in 1897. Helen Porter Mitchell is the real name of Dame Nellie MelbaMelbaMelba, who formed the surname of her stage name from her hometown of Melbourne, Australia. I didn't even think to look down the cracker aisle! I had no clue what I was looking for so I was in the bread section.

No, that's the zwiebak (sp?) stuff. Melba toast is really hard. Sometimes you find it on salad bars.
