Help!! I have a host for April that wants to do a BBQ show and I have NO Pampered Chef BBQ recipes. She mentioned going to a show before where they did a recipe called Santa Fe Chicken and they made some fresh salsa and put it on top. Has anyone heard of this? Any Pampered Chef BBQ recipes will be greatly appreciated!

Thanks!Thanks to both of you! The recipes on the link to that site sound yummy, but I was kind of hoping to do a Pampered Chef BBQ recipe. Stephanie if you could post the recipe for the Teriyaki Chicken kebobs (p.9) and the Lemon chicken w/cucumber salsa (is that BBQ? - p.10) in the Casual Cooking I would really appreciate it. Also, if there are any other BBQ recipes in there that you have tried and really like, please post them too. I would like to be able to give her a few options if possible. Thanks again so much to both of you and any others that may reply, you guys are the BEST!!!!
 
Okay, forgive the typos---it's after midnight here, so there will be lots!!!


Lemon Chicken with Cucumber Salsa​
CHICKEN AND MARINADE
1 Broiler-fryer chicken (4 pounds), cut into quarters
2 Lemons
3 Garlic cloves, pressed
2 Tbsp Olive oil
2 tsp dried oregano leaves
1 tsp paprika
1/2 tsp salt
1/4 tsp ground black pepper

CUCUMBER SALSA
1/2 medium unpeeled cucumber, seeded and coarsely chopped, (1 Cup)
2 Tbsp coarsely chopped red onion
1/3 cup pitted ripe olives, sliced
1/4 cup diced red bell pepper


1. For chicken and marinade, rinse chicken and pat dry with paper towels. Trim any excess fat from chicken using Kitchen Shears. Zest lemons using Lemon Zester/Scorer to measure 1 tablespoon zest. Juice lemons using Juicer to measure 1/2 cup juice. Place zest and juice in Small Batter Bowl. Press garlic into batter bowl using Garlic Press. Add oil, oregano, paprika, salt and pepper; whisk using Mini-Whipper. Remove 2 tablespoons of the marinade and reserve for use in the salsa.

2. Place chicken and remaining marinade in resealable plastic food storage bag, turn to coat. Marinade in refrigerator 2-4 hours, turning occasionally.

3. Meanwhile, for salsa, coarsely chop cucumber and onion using Food Chopper. Slice olives using Egg Slicer Plus; dice bell peper using Chef's Knife. Place vegetables in small bowl; add reserved 2 tablespoons of marinade and mix gently. Cover and refrigerate until ready to serve.

4. Prepare grill for indirect cooking over medium coals. Remove chicken from marinade, discard plastic bag with marinade. Place chicken, skin side up, on the grid of the grill using Barbeque Tongs. Grill, uncovered, 45-50 minutes or until chicken registers 180F in the thickest part of thigh portion and juices run clear. Serve salsa with chicken.

Teriyaki Chicken Kebabs with Asian Rice

MARINADE AND KEBABS

1/2 cup reduced sodium soy sauce
1/2 cup packed brown sugar
1 Tbsp finely chopped, peeled fresh gingerroot
2 Garlic Cloves, pressed
2 tsp dark sesame oil
6 boneless, skinless chicken breast halves
1 medium green bell pepper
1 medium red bell pepper
3 fresh pinapple slices, cut 1 inch thick


ASIAN RICE
1 can (14 1/2 oz) reduced-sodium chicken broth
1 2/3 cups water
1 Tbsp butter or margarine
2 tsp Pantry Asian Seasoning Mix
1 1/2 cups uncooked converted or long grain rice
1/3 cup sliced green onions with tops

1. For marinade, combine soy sauce and brown sugar in Classic Batter Bowl. Finely chop gingerroot using Food Chopper. Add gingerroot, garlic pressed with Garlic Press and oil to batter bowl; mix well. Reserve 1/2 cup marinade, set aside. For kebabs, cut chicken lengthwise into thin strips and add to marinade in bowl, tossing to coat. Cover; refrigerate 1 hour.

2. Meanwhile, cut bell peppers into twenty-four 1 inch pieces. Cut pineapple into quarters to make 12 pieces. Prepare grill for direct cooking over medium coals.

3. Remove chicken from marinade; discard marinade in batter bowl. Weave chicken, along with bell pepper, and pinapple onto six 12-inch skewers. Place kebabs on the grid of grill; brush with some of the reserved marinade using Barbeque Basting Brush. Grill, uncovered, 10-12 minutes or until chicken is no longer pink, turning occasionally with Barbeque Tongs and brushing with marinade. Discard any remaining marinade.

4. Meanwhile, for Asian rice, bring chicken broth and water to boil in Medium (3qt) Saucepan. Add butter and seasoning mix. Stir in rice. Reduce heat, cover and simmer 20 minutes. Remove from heat; stir in green onions. Let stand 5 minutes.

There is a grilled pizza one in the cookbook I dont have it but I did it at a show one day very yummy
 
Great BBQ showI had a ton of BBQ shows last summer and got rave reviews from doing the Grilled Chicken Caprese (it fits with the Italian theme, too!)and the Grilled Spiced Bananas (book shows by describing this like Bananas Fosters on the grill). They are in the Great Grilling Recipe Cards Collection. The chicken is so incredibly easy and absolutely delicious and the bananas are so impressive because people aren't used to doing dessert on the grill. I'd suggest forgetting the tin foil packets and just slicing the banana open long ways, slicing the fruit into rounds right inside the skin (if you leave it whole, it turns out looking quite pornographic), and adding the juice and sugars right inside the banana skin. Grill the banana right inside the skin, then scoop it out and serve with ice cream.

You guys are awesome!!!Thank you guys so much for these great ideas and for posting recipes. I think I will have to invest in the Great Grilling Recipe cards soon. If anyone has the Grilled Chicken Caprese recipe and the bananas foster recipe, Pretty Please post it for us! I'm sure we would all appreciate it! Also, if there are any more Pampered Chef BBQ recipes out there - please post :) !!! Thanks again SO much to all of you!
 
I would love to get the Great Grilling Recipe Cards Collection recipes too. I have a BBQ Fundraiser the end of April. This is my first Fundraiser and BBQ Cooking Show! I also need something for Diabetics or Healthy on the BBQ. HELP!!!
