A consultant was asking about the artichokes. She was wondering about cooking the artichokes, the recipe doesn't call for it but she thought it was weird having this little cold things in the salad.

I have made this recipe a few times now and I do not cook them. You use them at room temperature (straight from the jar/can).

I've never cooked the artichokes, but I do saute the onion and pepper for just a bit (you want them still crunchy in the salad!) - it takes away the bite, makes them sweeter, and I think makes the salad taste even better!

Frequently Asked Questions

What ingredients do I need for the Lemon Pepper Chicken Recipe?

For the Lemon Pepper Chicken Recipe, you will need boneless, skinless chicken breasts, lemon juice, olive oil, lemon pepper seasoning, garlic powder, salt, and pepper. Additionally, you may want to include artichokes for the salad, which can be canned or fresh, along with your choice of salad greens and other vegetables.

How do I cook the chicken to ensure it is juicy and flavorful?

To ensure your chicken is juicy and flavorful, marinate it in a mixture of lemon juice, olive oil, lemon pepper seasoning, garlic powder, salt, and pepper for at least 30 minutes before cooking. Grill or bake the chicken until it reaches an internal temperature of 165°F, and let it rest for a few minutes before slicing to retain moisture.

What is the best way to prepare artichokes for the salad?

If using fresh artichokes, trim the stems and remove the tough outer leaves, then steam or boil them until tender. If using canned artichokes, simply drain and rinse them before adding to your salad. Cut them into quarters or halves for easier eating.

Can I use other vegetables in the salad with the Lemon Pepper Chicken?

Absolutely! You can customize your salad by adding a variety of vegetables such as cherry tomatoes, cucumbers, bell peppers, or red onions. Feel free to include any fresh herbs or nuts for added flavor and texture.

What dressing pairs well with the Lemon Pepper Chicken Salad?

A light vinaigrette made with olive oil, lemon juice, and a touch of honey complements the flavors of the Lemon Pepper Chicken beautifully. Alternatively, a simple balsamic vinaigrette or a creamy dressing like ranch can also work well, depending on your preference.
