Have you tried making cheese truffles with finely shredded cheese?

In summary, cheese truffles are bite-sized, savory treats made with a mixture of cheese, herbs, and other ingredients. To make them, you mix together your chosen cheese with herbs and spices and shape them into balls, then roll them in a coating before chilling and serving. Soft, spreadable cheeses like cream cheese, goat cheese, or feta work best, but harder cheeses can also be used. They can be made ahead of time and stored in the refrigerator or frozen, and popular toppings include chopped nuts, herbs, and spices.

Thanks so much!

these truffles are so yummy! I could eat them until I was sick!:blushing:  :D

If you don't grate the cheese w/ the deluxe cheese grater using the small-hole barrel, buy the really finely shredded cheese. It's MUCH better!
