can potato salad be frozen and still be fine when thawed?

I haven't ever tried it, but I'd have to say that I wouldn't do it. I know that when I've frozen veggie soup with potatoes in it, they weren't very good when they came out. Also, the mayo probably wouldn't hold up well in the freezer.

the reason I ask is I had some leftover and put it in a cool whip container....that container accidently was put in the freezer (I thought I was putting the cool whip there)... ok, sr. moment..... at least I didn't try to put the milk carton in the microwave! Whoops, did that before and realized it when the carton would not fit!
Thanks, ladies!

Yes - the mayo, the potatoes, and any raw veggies, plus if there are hard boiled eggs - none of those things can be frozen, and maintain a good food quality.

So, really, there is nothing about potato salad that lends itself to being frozen.:D
