Most of my family lives out of town. I am wanting to do an internet 'show' as my 'Open House Business kick-off' party. What should I do to make sure its successful??

I would send a personal email, along with one through Pampered Chef.
 
I second the "send a second email" suggestion. I've found that invites sent from home-party-plan sites (not just ours) tend to get pushed into spam folders by email programs. Sending another note direct from you will give your friends and family a second chance to see it. You can even send yourself the invitation and forward it (with an additional note from you), so the link to online shopping is in it.
 
I never send emails to customers/contacts through our website, I send the message to myself and then forward that to the customers/contacts. I never send it to more than 10 people at a time (I've set up email groups) and I wait an hour between sending each group. I do all this extra effort so that it is unlikely that the email will be treated as spam by email filters.
 
Some of my biggest shows have been "internet" shows! ANd I have nevre met face to face my hostess that always has them for me.... I set her up online through my website and she goes in and actually uses our website like it suppossed to be used for online shows. I have gotten sveral bookings, and like I said she lives almost 500 miles away... its a wonderful and when you have tons of other shows going this one is kinda nice. Very minimal trouble! But anyhow, thought I'd share.

The biggest thing is to get your host excited about gathering orders because she'll be able to save $$$ if she collects a bunch of order. I had a $1000+ catalog show in March this year because the host asked everyone! Tell your host that she can have a $1000 show, too! I also sent her catalogs and OOFs for her friends/neighbors that weren't internet savvy, then she used the website to send me their orders. It helped her track her goals and it made it easy for me since everything was online.
 
Something I do is send the website email for a show to my personal email box then forward it on to friends and family...that way it shows as coming from me:)

Since it will be your kick off show, I would also call everyone you are emailing... treat that call as your opportunity to explain your new business and invite them to join you or to host their own catalog show.
