Anyone have a rockin' recipe for this? I didn't see any in the files and the recipe I tried was NOT great. :( TIA!
 
I do, I do! From Cooks Illustrated:Greasing and flouring only the bottom of a regular loaf pan causes the bread to cling to the sides and rise higher. If using a nonstick loaf pan, on which the sides are very slick, grease and flour sides as well as the bottom.Makes one 9-inch loaf
2 cups unbleached all-purpose flour
3/4 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon table salt
1 1/4 cups toasted walnuts , chopped coarse (about 1 cup)
3 very ripe bananas , soft, darkly speckled, mashed well (about 1 1/2 cups)
1/4 cup plain yogurt
2 large eggs , beaten lightly
6 tablespoons unsalted butter , melted and cooled
1 teaspoon vanilla extract 1. Adjust oven rack to lower middle position and heat oven to 350 degrees. Grease bottom only of regular loaf pan, or grease and flour bottom and sides of nonstick 9-by-5-by-3-inch loaf pan; set aside. Combine first five ingredients together in large bowl; set aside.2. Mix mashed bananas, yogurt, eggs, butter, and vanilla with wooden spoon in medium bowl. Lightly fold banana mixture into dry ingredients with rubber spatula until just combined and batter looks thick and chunky. "This banana bread features cocoa, chocolate chips, sour cream and a bit of vanilla extract."
INGREDIENTS:
1 cup margarine, softened
2 cups white sugar
4 eggs
6 bananas, mashed
2 teaspoons vanilla extract
3 cups all-purpose flour 2 teaspoons baking soda
1/4 cup unsweetened cocoa
powder
1 cup lite sour cream
1 cup semisweet chocolate
chips
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
2. In a large bowl, cream together margarine, sugar and eggs. Stir in bananas and vanilla. Sift in flour, baking soda and cocoa; mix well. Blend in sour cream and chocolate chips. Pour batter into prepared pans.
3. Bake in preheated oven for 60 minutes, or until a toothpick inserted into center of a loaf comes out clean.

Here's my homemade banana bread recipe - it's da BOMB!Banana Bread Recipe 1 cup sugar
½ cup butter (1 stick)
2 eggs
¾ cup mashed banana (about 2-3 ripe bananas)
1 ¼ cup flour
½ teaspoon salt
¾ teaspoon baking soda
½ cup chopped nuts (if desired) 1.Preheat oven to 350°F.
2.Cream sugar and butter together in mixing bowl.
3.Add eggs, one at a time.
4.Add banana.
5.Mix dry ingredients (flour, salt, baking soda) separately, then add slowly to mixture.
6.Pour batter into loaf pan sprayed with nonstick cooking spray.
7.Bake 45 – 50 minutes or until center is done.
