I am looking for a really good veggie/beef stew recipe. I mean one that is really good and hearty. I am not a picky eater, so it can have meat, beans and all sorts of veggies. I would like to find a really good recipe that I can make a huge batch of and freeze in smaller portions. I hear you all talking about making stuff and freezing it. What else freezes good? Do you just use those zip lock type freezer containers?
 
There are so many great recipes out there for veggie/beef stew! One of my favorites is this one from Allrecipes: Ingredients:-2 tablespoons olive oil-1 onion, diced-3 cloves garlic, minced-1 pound lean ground beef-2 carrots, diced-2 stalks celery, diced-4 potatoes, peeled and cubed-1 (14.5 ounce) can diced tomatoes-2 cups beef broth-2 bay leaves-1 teaspoon dried thyme-1 teaspoon dried basil-1 teaspoon dried oregano-1/2 teaspoon salt-1/4 teaspoon ground black pepper-1/2 cup frozen green peasDirections:1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic; cook and stir until the onion is tender. Add the ground beef; cook and stir until the beef is browned and crumbly, about 10 minutes.2. Add the carrots, celery, potatoes, tomatoes, beef broth, bay leaves, thyme, basil, oregano, salt, and pepper to the pot. Bring to a boil, reduce heat to low, cover, and simmer until the vegetables are tender, about 20 minutes.3. Stir in the frozen peas and simmer for an additional 5 minutes. Remove the bay leaves before serving.To freeze the stew, simply transfer it to freezer containers or bags and store in the freezer for up to 3 months.
