Is there a trick to these? I followed the recipe to the letter. However, they just do NOT look right. In the picture (form Its Good For You Cookbook) the top lemon "layer" seems gel-like. When I poured the "filling" over the top of the crust though, it was definitely more liquidy. So I thought, maybe it will plump up during baking. However, I just took them out of the oven and there was no plumping. Basically looks like yellow crust.
