When I made them my family thought that they were a little dry. Too much lettuce, so we did them as appetizers using tortilla chips instead of the taco shell. It was awesome!

You can also use a 3-2-1 cake recipe. 3 eggs, 2 cups (approx. 16 oz) of sour cream and 1 cake mix. This is about the only way I have done the microwave cakes.

I made this recipe and it turned out great!!! Everyone loved it. The only change I made was I used a jar of tomato pesto instead of the sun dried tomatoes and it was super simple.
